Fresh Veggie Salad

This is one of my favorite summer salads. Great for a BBQ, family get together or just as a nice cold, refreshing side dish with a meal.

It's easy to make and very easy to customize to your family's liking. I like chopped green olives in mine, Pool Guy likes to sprinkle some sunflower seeds on his. This salad is so versatile.





Fresh Veggie Salad (all ingredients are raw)

  • Cauliflower
  • Broccoli
  • Red Onion
  • Carrots, cut match stick style
  • Sharp Cheddar Cheese, cubed or crumbled
  • Miracle Whip (or mayo with just a sprinkling of splenda or sugar)
  • Ranch Dressing
  • Garlic Powder
  • Italian Seasoning

Cut all your veggies into bite sized pieces. Cut as much as you want for the size salad you are making. I typically use about 1/3 of the cauliflower, broccoli and one really thick slice of the red onion ~ chopped, about 3/4 of a cup of the carrots and 1/2 cup of the cheese.

For the amount of veggies I cut, I use 1/2 cup of mayo, 1t splenda and 1/2 cup of ranch dressing and 1/2t of garlic powder and about 1/2t of Italian seasonings.

I like to mix the dressing in a measuring cup and then pour on in increments as I mix it into the veggies. I don't want my veggies swimming in the dressing. Just nicely coated.
