A baked chicken dinner for 3 for under $4 with enough left over for a light lunch or some really good chicken salad?
My grocery store had whole chickens on sale this week for 87 cents per pound. I bought two (the limit) but will go back for more as soon as I figure out how many I can stuff into the freezer. LOL
Baked Chicken Dinner
1 - whole chicken cut up ~ 2.67 (after cutting up and "extras" put into freezer for use later)
1 - onion sliced ~ 27 cents
2 - med. yukon gold potatoes ~ 42 cents (I had a couple small and one med today)
5 - cloves of garlic ~ 8 cents
1/4 cup - Olive oil (a little less actually) ~ 27 cents
Seasonings ~ 5 cents (salt, pepper, garlic powder, onion powder, paprika)
After cutting up the chicken, take all the "extra" parts and put them in a zipper bag and freezer for using to make broth later. ;)
Place chicken pieces, chunked potatoes, onion slices and whole garlic cloves in a large bowl. Pour olive oil over and make sure everything is well coated.
Season. I make sure the chicken is also seasoned under the skin. You don't want all the flavor to come off with the skin now do you?
Pour contents of bowl onto a baking sheet.
Bake at 400 degrees for 30 min, then turn down the heat to 350 and bake for another 15-20 min depending on how big the pieces of chicken are.
The chicken skin is crisp, meat tender and juicy. You can't beat roasted potatoes, onion and garlic.
I served with a can of green beans tonight. We had some potatoes, a chicken leg quarter, a wing and about 1/2 a breast left over.
Total cost: $3.76
